Tasty Vegan Recipes You Can Cook At Home

Over the last few years, a growing number of people have refused to eat meat, and instead undertaken lives of veganism, which is a hardcore version of vegetarianism in which no animal products can be used. Vegan recipes has a number of advantages, and people can expect to see huge benefits on their health in a short amount of time after embarking on a path toward total veganism. Many, however, believe that veganism must be bad simply because they are used to eating meat, and wrongly believe there are no delicious vegan recipes. Well, we are going to prove that wrong.

Yes, in this article, we are going to tell you a few tasty vegan recipes that you can cook at home. We will offer a starter, a main, and a dessert so that you can prep a full-course vegan meal.

Here are three tasty vegan recipes you can cook at home!

The Starter: Tofu and Split Pea Soup

This is a recipe that everybody loves. What’s not to like about a crockpot split pea soup recipe, though if you do not have a crockpot, feel free to use an ordinary pot. As with a crockpot you need only combine all the ingredients and turn it on, we will only proceed with a cooking method for a normal pot. The ingredients are:

  1. 1 cup split peas (or lentils of any colour);
  2. 1 cup cubed tofu;
  3. 1 cup cubed San Marzano tomatoes, or ½ tin chopped San Marzano tomatoes;
  4. ½ green chilli, sliced;
  5. ½ red chilli, also sliced;
  6. ½ tsp turmeric;
  7. ½ tsp salt;
  8. ½ tsp pepper;
  9. 1 tbsp olive oil;
  10. 2 cloves of garlic, roughly chopped;
  11. ½ a yellow onion, roughly chopped.

To start with, heat your olive oil up in the bottom of your cooking pot. When the olive oil has heated up, go ahead and fry the onion until translucent, then the garlic until fragrant. Season your garlic and onions with salt, turmeric, and pepper. At the same time, add your green and red chillies into the pot, then follow by adding in your tofu. After five minutes, add your San Marzano tomatoes into the pot, as well as your split peas. If you need to add more water, do so until the peas are covered; allow the mixture to cook for 45 minutes then serve in bowls hot, garnish with parsley. 

The Main: Aubergine and Tomato Pasta

For our main, you will need the following ingredients:

  1. 1 cup Farfalle pasta;
  2. 1 tin San Marzano plum tomatoes, or three large San Marzano tomatoes, skin and seeds removed;
  3. 1 whole aubergine, cubed;
  4. 1 clove of garlic, finely sliced;
  5. 1 whole yellow onion, sliced;
  6. 2 tbsp olive oil;
  7. 1 cup garden peas.
  8. 1 tsp salt;
  9. 1 tsp pepper.

To start with, fry your cubed aubergine in a pot – if it soaks up the oil, add more. Remove the aubergine from the pot, and in the same pot, heat and fry your onion and garlic in the same pot you intend on cooking in. In a separate pot, boil water, salt, and add your pasta. When the garlic and onion are fragrant, season with salt and pepper. Add your aubergine into the pot, as well as your San Marzano tomatoes, and your garden peas. Allow to cook for up to thirty minutes, then remove and mix with pasta. Eat with crusty bread. Another delicious vegan meal done!

The Dessert: Soya Rice Pudding

Ingredients:

  1. 2 cup soya milk, sweetened;
  2. 1 cup short-grain rice;
  3. ½ jaggery;
  4. 1 tsp saffron threads;
  5. 1 tbsp cardamom pods;
  6. 1 tbsp pistachios;
  7. 1 tsp honey.

To start with, mix your soya milk and rice in a pot, cover, and allow to cook on medium heat for fifteen minutes. After fifteen minutes, combine your jaggery, saffron, and cardamom, as well as your honey. Allow the mixture to cook for up to an hour, though if you notice the mixture reducing at all, feel free to take it off of the heat. Rice pudding is a matter of subjectivity. Some prefer it wet, others thick. The longer you cook it, the thicker your rice pudding will be, so feel free to shorten the cooking time in order to achieve the consistency that you desire.

Add the pistachios to the mixture after cooking and serve hot in bowls. You can cool this down and eat it straight from the fridge, too. It is one of my absolute favourite vegan recipes and one that I make regularly.
