The rabbit tamale with fig mole and a Maitake al Copal mushroom starter are the dishes to order, alongside a pepita cocktail that has already become the bar&#8217;s signature.</p>
<p>Because it just opened, Malinche hasn&#8217;t yet been swallowed by the crowds that find every new room in this city. The small footprint and serious sound design keep it intimate even at capacity, which makes it about as close as Denver gets right now to a genuine discovery.</p>

It is a food film in the tradition of the best Chef&#8217;s Table episodes, except it has room to breathe in ways a television episode never does, and Martinez himself is a genuinely compelling subject: driven, reflective, and clearly in the middle of something he has not fully figured out yet.</p>
<p>What makes this more than a chef hagiography is the way it frames cuisine as an act of listening. Martinez does not approach Peruvian ingredients as raw material for his creativity; he approaches them as things with histories that his cooking should be in dialogue with. That orientation, toward ingredients as cultural objects rather than components, comes up increasingly in conversations about where fine dining is heading, and Virgilio makes the case for it better than any manifesto could. <p>Horrifically dense grey cities are dotted and illuminated by beautifully rich and dynamic colors surrounded by vast areas of orange dessert and perfectly bleak synthetic farms.</p>

<p>Even with all this beauty interspersed and layered with complete desolation, what I found most striking about the cinematography of Blade Runner 2049 (which won an Oscar) is the very deliberate and sparing use of rich and deep blue palates.</p>

<p>This color palate is used very discriminately in the film, only in a few key scenes are bathed in this soothing yet dynamic blue. This makes the blue&#8217;s presence very important in the instances it shows up.</p>

<p>And then it hits me; the deep and foreboding blue tones that I love so much in Blade Runner 2049 are used to harken to the original Blade Runner, which used this blue palate extensively throughout the film, much more than in 2049.</p>

<p>This shared visual palate and theme connects the films in ways that are much deeper than in other sequels; the two Blade Runners are united not only in story, world, and characters but also through art and visual storytelling. This type of connection and art forward movie making elevates the two Blade Runners to some of the best and most artistically valid movies of our time.</p>

<p>This blue palate not only unites the movie in deep and intrinsic ways it also unites Deckard and K, the Blade Runners themselves. They both go through the same stages of knowing who they are fully, to questioning the very nature of their existence and identity, to ultimately turning on those they originally identified with.</p>

<p>The blue is their reckoning and represents the eternal struggle to find oneself true self and the identity that may or may not define who we are.</p>

<p>So to honor the intricate beauty and unity of Blade Runner and Blade Runner 2o49 I created a custom craft cocktail that encapsulates both the visual style and unique palate of these films.</p>

<li>1 ounce fresh Lime Juice</li>

<li>1 dash Angostura Bitters</li>

<p>Add all ingredients to an ice-filled stainless steel shaker, and stir extremely well. Strain in to a cocktail glass and garnish with a simple lemon twist.</p>

<p>Just like the movies it is based off of, Soaked in Blue: A Blade Runner Cocktail is a visually striking yet deep and complex original cocktail. The dry London Gin gives the Soaked in Blue a perfect base that represents the Blade Runner universe to a T: dry on the front end and complex and deep at its core. The Blue Curaçao adds hints of bitterness due to the Laraha, a bitter Orange variety that the liquor gets its soul from.</p>

<p>All told, Soaked in Blue: A Blade Runner Cocktail can be a bit dry and hard to access for some, just like the movies but as with Blade Runner, it is well worth it in the end. If you need to add a dash of fresh simple syrup to sweeten it up a bit, making it more accessible.</p>

<li>11⁄2 parts EFFEN® Vodka</li>
<li>1 part tonic water or soda water</li>
<li>1⁄2 part lemonade</li>
<li>4 strawberry slices</li>
<li>3-4 basil leaves</li>
<li>2 lemon slices</li>
</ul>
<p>In a red wine glass, place basil leaves, lemon slices and strawberries. Add large hand-carved cubical ice with the EFFEN Vodka and lemonade. Top with tonic or soda water and garnish with a fruit and basil leaf skewer. I recommend muddling a couple strawberry slices and mint leaves in the bottom of the glass before adding anything else to get a bit more flavor. I also feel that tonic water is a far better choice than club soda in bringing out more complex and satisfying notes in this superb cocktail.</p>

<p class="wp-block-paragraph">Tea brewing has been done by humans since at least the third century AD, but likely much longer than that. It is a cultural staple in many places around the world and can be part of a healthy lifestyle. This being said, there’s a lot about tea that people don’t know, and these facts influence how tasty your tea is as well as how healthy it is. The following will explore some of the do’s and don’ts when it comes to tea brewing.</p>



<h2 class="wp-block-heading" id="h-don-t-make-all-types-of-tea-at-the-same-temperature">Don’t Make All Types Of Tea At The Same Temperature</h2>



<p class="wp-block-paragraph">If you’re new to the world of tea brewing, you might feel like your cup tastes just fine when all the different types of tea in your cupboard are made at the same temperature. Talk to someone with lots of tea experience, however, and they’ll quickly point out that different types of teas need to be steeped in different temperatures for ideal flavour and aroma. The more delicate a plant’s leaves, the cooler the water you should use for your brew. As a general rule, this means that <a href="https://www.thespruceeats.com/tea-brewing-temperature-guide-766367">green and white teas need cooler water</a> than black teas. If delicate leaves are steeped at a temperature that’s too high, the leaves actually burn a little and produce a more bitter flavour. As a general rule:</p>



<ul class="wp-block-list"><li>Black tea can be steeped in boiling water. Most commonly, the steeping lasts between 4 to 6 minutes.</li><li>Oolong tea’s delicacy falls in between green and black tea. The ideal brewing temperature is around 190 F for somewhere between 5 and 8 minutes.</li><li><a href="https://www.factorytwofour.com/healthy-products-that-will-boost-your-immune-system/">Green tea</a> needs a bit of restraint when it comes to heat. Ideally, you want to keep the water between 150 and 160 F and steep for a shorter time. Somewhere between 2 and 4 minutes is best.</li><li>White tea brews best at around 180 F for 4 to 6 minutes.</li><li>Rooibos tea is hearty and can handle boiling temperatures, just like black tea.</li></ul>



<p class="wp-block-paragraph">If you’re having difficulty gaining a good sense of the temperature of the water you’re using, you can pay attention to the bubbles within it as it is being heated. Between 160 and 170 F is when small bubbles begin to float up to the surface. When you see strings of bubbles at the bottom, this means you’re around 180 to 190 F.</p>



<h2 class="wp-block-heading" id="h-do-your-research-about-preparation">Do Your Research About Preparation</h2>



<p class="wp-block-paragraph">Sadly, like every other aspect of human life, profit and ignorance have crept into the tea industry. If you’re steeping loose-leaf, you want to be sure that the material the strainer is made out of isn’t going to be leaching toxins into your tea. This means no plastic and no aluminum. Stainless steel or bamboo is acceptable. And no, just because the plastic is BPA-free <a href="https://www.mensjournal.com/health-fitness/why-bpa-free-plastic-isnt-necessarily-safe-20140611/">doesn’t mean it’s safe</a>. There are countless other toxic compounds in plastic besides BPA.</p>



<p class="wp-block-paragraph">If you’re buying tea that comes in a bag, you’ll need to learn about the materials the bag is made out of. Too often, tea bags are coated with a carcinogen called epichlorohydrin, which becomes active in hot water. Teabags are also made with <a href="https://www.hindawi.com/journals/jt/2013/370460/">plastics like PVC or food-grade nylon</a>, both of which start breaking down in water at room temperature. This contributes to the endocrine disruption happening on a worldwide scale as well as contributes to certain cancers and degenerative brain disorders. It is estimated that the average person on earth ingests a credit card’s worth of plastic every week in the food they eat, drinks they drink, and air they breathe.&nbsp;</p>



<h2 class="wp-block-heading" id="h-don-t-assume-your-tea-is-healthy">Don’t Assume Your Tea Is Healthy</h2>



<p class="wp-block-paragraph">Besides preparation methods, many teas can contain harmful additives, preservatives, and intense amounts of pesticides. <a href="https://www.bondibeachtea.com.au/">Bondi Beach Tea Co.</a> suggests looking for a tea that is made from 100% organic plants with no added flavours. Fake flavouring is one of the fastest ways to get into health trouble when you’re eating and drinking.&nbsp;</p>

Sugar increases your risk of <a href="https://draxe.com/health/how-sugar-can-cause-cancer/">cancer</a>, diabetes, obesity, heart disease, and degenerative brain disorders like Alzheimer’s disease. If you can’t handle the taste of your tea without sugar, start by steeping the tea for a shorter period of time so that it is not so strong.</p>



<p class="wp-block-paragraph">Artificial sweeteners like aspartame, saccharin, sucralose, acesulfame potassium, or Ace-K confuse your metabolism resulting in greater appetite over longer periods of time and higher risks of obesity, type 2 diabetes, metabolic syndrome, cancer, and gut bacteria problems. Stevia has also been shown to <a href="https://pubmed.ncbi.nlm.nih.gov/32356872/">negatively impact the gut bacteria</a>, which influences your mood, immune system, and risks for obesity, type 2 diabetes, heart disease, inflammatory bowel diseases (including Crohn’s disease and ulcerative colitis), colon cancer, anxiety, depression, autism spectrum disorder, and arthritis.</p>



<p class="wp-block-paragraph">The above do’s and don’ts should have made it clear that tea brewing is much more varied and complicated than many believe.
